While I was working in Delhi, a friend of mine used to get these amazing sandwiches her mom used to pack for her. She used to make amazing homemade Mayo and I managed to learn it from her..somehow :)

I'm really fond of Mayo and when i tried to make it a long time was a total disaster..:(.

A panic call to Aunty and I knew where I went wrong. Making mayo is directly proportionate to the amount of patience you have!!!

Try, try, try until you my motto :) So I decided to try it out once again...

Well here’s the recipe…

300 ml light olive oil, or half olive oil and half groundnut oil
2 egg yolks
1 tsp Dijon mustard
½ tsp salt
½ tsp sugar
3-4 tsp vinegar

1.) Place the egg yolks, mustard, sugar and salt in a mixing bowl and whisk until thoroughly mixed.
2.) Pour the oil into a measuring jug and slowly add it drop by drop to the mixture and continue to whisk.
3.) Add the vinegar to thin the mayo and continue until all the oil is used up.
4.) Taste the mayo and add the pepper. Add salt if required.
5.) Store in a screw-topped jar in the refrigerator.

Press 6-7 garlic pods into the mayo using a garlic presser to add a garlicy flavor to the mayo.
